Coco Milis is a small, independent bean-to-bar chocolate maker based in West Donegal. Every bar is handcrafted in micro-batches, using single-origin cacao sourced from Nicaragua and simple, natural ingredients.

Founded in 2022, Coco Milis grew from a love of real, honest chocolate and a desire to create treats that are both delicious and ethically made. Inspired by the wild landscapes of Donegal and the local artisan community, the chocolate often incorporates flavours from the region, including collaborations with local coffee roasters and distilleries.

Sustainability is at the heart of everything, from ethically sourced cacao to compostable packaging. Coco Milis chocolate is about slowing down, enjoying something truly indulgent, and celebrating both the craft of chocolate and the place it comes from.

What does Bean-to-Bar mean?

Bean-to-bar means I make the chocolate from scratch, starting with raw cacao beans. I roast, grind, refine, and temper the chocolate myself in Donegal, rather than using pre-made chocolate. It gives me full control over flavour and quality.

Where do your cacao beans come from?

I use single-origin cacao sourced from Nicaragua. I chose these beans for their beautiful flavour profile and because they are grown with strong ethical and environmental values in mind.

What ingredient do you use?

My chocolate is made with just a few simple ingredients: cacao beans, cocoa butter, and coconut blossom sugar. For milk bars, I use Irish full-fat milk powder. Flaboured bars include freshly ground coffee from local roasters and local flowers and herbs. I don’t use artificial flavourings, emulsifiers, or preservatives and NO PALM OIL!!

Is your chocolate vegan?

All of my dark chocolate bars (including the 75%, Espresso Dark, and Whiskey-Infused) are vegan. The milk chocolate bars contain Irish milk powder and are therefore not vegan.

Is your packaging sustainable

Yes. All Coco Milis packaging is compostable and biodegradable. I believe if we’re creating treats for people, we should leave only sweet memories behind — not waste.
