Ulster Mead Co. is Donegal’s first meadery, established in 2021 in Convoy with a clear vision — to revive one of the world’s oldest drinks and give it a modern Irish identity.
From the beginning, our goal has been to build a small but ambitious craft production facility focused on quality, authenticity, and innovation. What started as small experimental batches has grown into a fully operational meadery where all production now takes place on site.
We specialise in traditional mead (honey wine) and Ireland’s first and only coffee mead, both handcrafted in small batches using careful fermentation and minimal intervention. We prioritise clarity, clean flavour, and consistency in every bottle. King of the North Mead is our flagship product and was recently a finalist at Blas na hÉireann 2025. Meadnight Drakkar is made with freshly roasted beans from Donegal’s New Kid Coffee, combining rich coffee character with smooth honey notes.
Alongside our meads, we produce distinctive herbal wines crafted from dried herbs, flowers, and botanicals — the only products of their kind made in Ireland — offering something truly different to consumers and hospitality partners.
Sustainability and local collaboration are central to our approach. We work in efficient small production runs, support local suppliers where possible, and continuously improve packaging to reduce environmental impact.
As Donegal’s first meadery, Ulster Mead Co. is proud to contribute to the region not only through craft production, but also by collaborating with Chefs, restaurants, cafés, retailers, and by supporting local culture through initiatives such as our Ulster Room music sessions filmed in the meadery itself.
